I’ve always been stubborn about dry processed Yirgacheffes. They are so uniformly loved that I feel like the punk in me wants to reject them. It’s kind of like rejecting ‘London Calling’ from The Clash and saying you only listen to ‘Sandinista!’ That being said this coffee rules. It is lush and sweet with perfect red fruit notes and a milk chocolate structure. If there was a coffee that really says “Welcome to the rodeo”, it would be this Edido. It is wild and fruity and pretty in your face.
